In the Mood for: Avocado Citrus Tacos

I probably eat Mexican food 5/7 days of the week. I love the flavors and the spices but I especially love how easy it is to make on nights where I’ve had a long day and don’t feel like cooking. It’s quick and simple and tonight I’m in the mood for these Avocado Citrus Tacos. I make them with chicken or ground Turkey, throw it all into a crockpot and make a quick and easy salsa bursting with fresh flavors. These tacos will become a favorite in your evening rotation!

Avocado Citrus Tacos

makes 8 tacos


  • 1 lb of ground chicken or ground turkey

  • 1 can of your favorite salsa (I love Pineapple or Mango Salsa)

  • 8 Corn tortillas

  • 2 Avocados pitted and cubed

  • 2 oranges sliced and cubed

  • 1 lime-juiced

  • cilantro to taste

  • salt and peper to taste


  1. Add the ground chicken and turkey into the crockpot

  2. Pour in the can of salsa

  3. cook on low heat for six hours, cook on high heat for 3

  4. In a medium bowl, toss avocado, oranges, lime juice, cilantro, salt and pepper.

  5. Set aside

  6. Place the corn tortillas in the oven until warm to the touch

  7. Serve tacos with our favorite margarita recipe
